Ingredients For the Steamed Fish:

  • 2 whole red snapper or parrot fish (or fish of your choice), scaled and cleaned
  • 1 lime or lemon, cut in half
  • 2 tsp Woolery Forbes Seafood Spice
  • 1 tsp Woolery Forbes All Purpose Spice
  • 2 sprigs of fresh thyme
  • 2 cloves garlic, sliced
  • 1-inch piece of ginger, minced
  • 1 scotch bonnet pepper, ((optional: sliced for heat or added whole without blemishes/cuts for flavour)
  • 1 sweet/bell pepper, julienned
  • 1 carrot, julienned
  • 250g pumpkin, sliced
  • 9 okra, sliced
  • 1 onion, sliced
  • 1 tomato, diced
  • 2 tbsp butter
  • 3 tbsp coconut oil
  • 120 ml of water (or a bit more if needed)
  • Add salt to taste

Instructions

  1. Prepare the Fish:

    • Heat coconut oil and butter in a large skillet or pot over medium heat.
    • Add the tomato, onion, garlic, ginger, and scotch bonnet pepper (if using), and sauté for about 2 minutes until fragrant.
    • Add the bell pepper, carrot and thyme. Cook for another minute.
  3. Create the Sauce:
    • Pour in the water. Stir to combine and cook till the vegetables soften.
    • Add the allspice and bring the mixture to a simmer.
  4. Steam the Fish:
    • Place the fish and the okra on top of the vegetable mixture in the skillet or the pot.
    • Cover and steam the fish for about 15-20 minutes, or until the fish is cooked through (easily flakes with a fork).
  5. Combine and Serve:
    • Once the fish is cooked, carefully remove it from the skillet or the pot.
    • Spoon the vegetable onto a plate and place the fish on top or beside the vegetables.

Serving Suggestion
