Jamaican Classic Curry Chicken Recipe Using Woolery Forbes Jamaican Curry and Chicken Spices

Jamaica’s motto, “Out of Many, One People,” encapsulates the essence of the island’s diverse culture. This unity in diversity is reflected in various aspects of Jamaican life, especially in its culinary traditions.

Curry spice was introduced to Jamaica by indentured Indian labourers after emancipation. However, in true Jamaican style, the spice was transformed, giving rise to what is now known as Jamaican Curry Spice. This version has a unique twist that distinguishes it from the original Indian curry, reflecting the island’s penchant for infusing adopted elements with its distinctive flair. Today, Jamaican Curry Spice is a beloved staple, enjoyed in a myriad of dishes, whether with meat or vegetables. Its warm and vibrant flavours are a testament to the richness of Jamaica’s cultural tapestry.

Woolery Forbes Curry Chicken recipe is a popular example of how the brand spice is used. Please note that each family might have their own unique version. Here is a basic recipe to start with, but don’t hesitate to add your personal touch to create a truly Jamaican Curry Chicken dish.

 

Woolery Forbes Curry Chicken Recipe

Ingredients:

  • 1 kg chicken (cut into pieces)
  • 1 1/2 tbsp Woolery Forbes Curry Spice
  • 1 tbsp Woolery Forbes Chicken Spice or Woolery Forbes All Purpose Spice
  • 1 onion (finely chopped)
  • 2 stalks of escallion / spring onion (finely chopped)
  • 3 cloves of garlic (minced)
  • 1-inch piece of ginger (grated)
  • 3 sprigs of thyme
  • 1 Scotch bonnet pepper (added whole without any cuts for flavour or chopped for heat so add amount, depending on heat preference)
  • 2 tbsp coconut oil 
  • 2 potatoes (peeled and diced)
  • 1 carrot (peeled and sliced)
  • 1 sweet pepper/bell pepper (chopped)
  • Salt and pepper to taste
  • 200 ml warm water  / 250 ml coconut milk (optional)

Instructions:

Prepare to Marinate the Chicken:

  • In a large bowl, combine the washed chicken pieces with all ingredients.
  • Mix well and cover. Let it marinate for at least 30 minutes, preferably overnight for best results.

Cook the Chicken:

  • Heat oil in a large pot over medium heat.
  • Add the marinated chicken to the heated pot with the fresh seasoning (without whole scotch bonnet pepper, sweet pepper/bell pepper, potato and carrot) sauté for about 3 minutes. This process warms the spices and releases the flavours so stir well.

Add Vegetables and Liquid:

  • Add the diced potatoes, carrot, whole scotch bonnet pepper and bell pepper to the pot.
  • Add warm water or the optional coconut milk and stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-40 minutes, or until the chicken is cooked through, the gravy/sauce has a good consistency and the vegetables are tender.

Adjust Seasoning: Taste and adjust the seasoning with salt and pepper as needed.

Serving Suggestions:

  • Serve the curry chicken with steamed white rice, rice and peas, boiled food or roti.
  • Add a side of steamed vegetables as an accompaniment.
